Caesar Salad With Crispy Bacon And Poached Egg

4 Rashers Turkey Bacon, chopped.
2 Large Eggs.
50g Romaine Lettuce.
Low-calorie Caesar Dressing.
1 Tbsp Vinegar.
Canola Oil Cooking Spray.
One Slice Wholemeal Brown Bread. 
Salt and Pepper. 


1. First off, we're going to make the croutons. Cut the bread into small 1cm cubes. Heat the canola oil spray in a frying pan over medium-low heat and gently fry the bread for about 4-5 minutes, turning occasionally. Once the bread is crispy and golden, remove from the pan and allow to drain on paper towels.
2. Fry the turkey bacon in the same pan over a medium-low heat until crispy. Remove from the pan and leave to cool down on a cooling rack or paper towels.
3Bring a large pan of water to a simmer over medium-high heat. Stir in the vinegar and a pinch of salt. Crack 1 egg into a small bowl and then gently transfer the egg to the simmering water. Repeat with the other egg. Reduce the heat to medium so that the water simmers gently. Poach the eggs for about 3 minutes, or until the whites are set but the yolks are still creamy. Using a slotted spoon, gently remove the eggs from the simmering water and set them on a paper towel to absorb the excess water.
4. Rinse the lettuce well under cold water before tossing in a large bowl with a splash of your low-calorie dressing (we used Kraft's 'Light Done Right Golden Caesar' dressing) to coat. Season to taste with salt and pepper. Scatter the croutons over the lettuce.
5. Top with the crispy turkey bacon, and then finally, the poached eggs. Sprinkle with freshly ground black pepper, a few drops of the low-calorie dressing and serve.
